These are jello hearts, actually Valentines Jello Hearts, and they are chillin’ in the fridge tonight. You can find the recipe here. I think they will be fun to make with different shapes, different colors.

Yesterday I shared an image of a spice mix, but am unable to find the exact recipe online. It is from the Better Homes and Gardens “Food Gifts” magazine for 2011. The recipe is for Mediterranean Salt & Herb Rub. If you search for that, you will find a gazillion different varieties of this mix. Here is the one I made:
1 & 1/3 cup coarse sea salt or kosher salt
2/3 cup dried parsley
1/4 cup dried thyme
1/4 cup dried rosemary
1/4 cup coarsely ground black pepper
1/4 cup dried shredded lemon peel
2 tablespoons garlic powder
2 tablespoons dried minced onion, finely crushed
Mix this all together. It makes about 4 cups. I divided it up into little jelly jars.
To use: lightly brush lean pork, leg of lamb or lamb chops, chicken, or fish with olive oil. Sprinkle with some of the spice mixture 9use 2 or 3 teaspoons per pound of meat); rub in with your fingers. Let stand for 15 minutes. Cook as desired.
